Rwanda Shyira


The Shyira washing station is quite special. At 2000 m.a.s.l it processes the highest grown coffees in Rwanda, with its farmers farming between 2000 and 2400 m.a.s.l.  
We were lucky enough to visit this washing station alongside Iain and Mel from the coffee magazine and Andre from Bottomless Blessings in June 2023. What an incredible experience! I will always remember the ladies singing as they sort the parchment for defects, as soon as they gave Iain a gap, he followed up with the Shosholoza, needless to say no one could hold their laughter.  
We visited Shyira at the end of the harvest period and got lucky enough to try our hand at coffee washing and sorting with the last drips and drabs to be delivered by bicycle. It’s a tedious process that demands appreciation for the hands doing the work.  
This is a beautiful, washed coffee at the higher end of specialty.  
It’s sweet with a crisp acidity accompanied by a juice, jammy body.  
The coffee boasts Berries, especially raspberries, in both taste and aroma, with some sweet honeybush tea and notes of chocolate.
