Yirgacheffe is one of the most loved and sought after coffees in the world, we bring to you this delicate and delicious Yirgacheffe from the Sidamo region in Ethiopia. This region has become well known for producing high quality coffees that it has it’s own regional designation.
Yirgacheffe is a district in the Sidamo region of Ethiopia and is widely regarded as one of coffee’s ‘birth regions’. Most of the coffees grown here are local varieties(previously known as Ethiopian Heirloom), other varieties include Jimma Agricultural Research Centre(JARC). JARC is a vital research centre for Ethiopia and provides disease resistant varieties that do not compromise on the deliciousness of the coffee itself.
Farming methods in this area are mainly traditional, farmers grow their coffee plants with other food crops(intercrop). This remains common practice on smaller farms as it maximizes land use and helps farmers to provide food for their families. Due to the nature of intercrop farming , farmers are generally organic-by-default. Most of the farm work is done manually including the processing of the coffee cherries.
The Coffee is selectively handpicked by landowners and their families, it is then sent to a collection center or directly to a washing station. At the washing station , coffee is sorted to discard any damaged or under ripe cherries . Cherries are put on raised beds to dry under shade for 10-14 days until the moisture content reaches 12%. During this time, cherries are turned regularly and hand sorted multiple times to discard any damaged or discoloured cherries. This is the epitome of labour and love, and shines through in the exquisite coffee flavours experienced in drinking this Yirgacheffe.
